Atlantic Caviar & Sturgeon Co. is a sustainable aquaculture farm located in the historic Happy Valley community in the shadow of the Blue Ridge Mountains of N.C. We are the only facility in North America currently producing Ossetra caviar from Russian sturgeon. We also produce Siberian and Atlantic sturgeon.
Aware of the depletion of wild sturgeon worldwide, the company founders broke ground on our aquaculture farm in 2005. Working closely with the North Carolina Agricultural Foundation and NC State University, the facility was completed in 2009. Commercial harvest of caviar and meat from the sturgeon began in 2012.
The farm currently possesses nursery and adult production facilities supported by state of the art recirculating aquaculture systems (RAS) which maintain exceptional water quality while minimizing water use. The small amount of effluent that is produced is captured and redistributed to agricultural fields. Also present at the farm is a HACCP certified processing and smoking facility and a caviar kitchen.
Our facility is HACCP- approved by the US FDA. By providing a superior supply of sustainable meat and caviar, we positively impact endangered wild sturgeon. Our fish are fed a high quality diet free of added hormones or antibiotics, and are raised in naturally cooled, pure water originating in the Blue Ridge Mountains.
